Tuna Noodle Casserole
Ingredients:
- 2 cups cooked pasta*
- 3 Tablespoons unsalted margarine or butter
- 2 Tablespoons flour
- 1 ¾ cups milk
- ¼ cup sherry
- 1 can (6½ounces) unsalted tuna, drained
- ¼ cup sliced fresh mushrooms
- 3 green onions, sliced
- 1 teaspoon fresh lemon juice
- ½ teaspoon thyme
- Dash of pepper
- 1 Tablespoon snipped chives
*Low protein pasta alternative can be substituted
Instructions:
Melt margarine in a large saucepan. Stir in flour until smooth. Stir in milk. Cook, stirring constantly, until mixture thickens and
boils. Stir in sherry, tuna, mushrooms, onion, lemon juice, thyme, pepper
and pasta. Heat until hot. Transfer into serving dish and sprinkle chives on top.
Makes five
servings.
