Strawberry Cake

Ingredients:

Cake:

  • 3 cups sugar
  • 2 cups butter or margarine
  • ¾ cup frozen strawberries (thawed and drained; reserve juices)
  • 6 eggs
  • 1 teaspoon vanilla extract
  • 3 ½ cups all purpose flour (plain)

Icing:

  • 1 stick butter or margarine
  • 1 box confectioners sugar
  • drained juice from strawberries

Instructions:

For Cake:

Preheat over to 350 degrees

  1. Measure all ingredients.
  2. Cream margarine a medium speed with electric mixer until light and fluffy.
  3. Gradually add sugar and vanilla extract. Cream thoroughly.
  4. Add eggs one at a time.
  5. Gradually add flour until mixed well.
  6. Add drained berries and mix well.
  7. Pour batter into a 10- inch tube or sheet pan.
  8. Bake at 350 degrees for about 1 hour and 15 minutes, or until a wooden toothpick inserted in the center of the cake comes out clean.
  9. Remove from pan and let cool.
  10. Frost cake.

For Icing:

  1. Cream butter.
  2. Gradually add sugar and strawberry juice. Mix well.

Suggestions:

May use your favorite berries – raspberries, blueberries, etc.
May use for cupcake batter.
