Strawberry Cake
Ingredients:
Cake:
- 3 cups sugar
- 2 cups butter or margarine
- ¾ cup frozen strawberries (thawed and drained; reserve juices)
- 6 eggs
- 1 teaspoon vanilla extract
- 3 ½ cups all purpose flour (plain)
Icing:
- 1 stick butter or margarine
- 1 box confectioners sugar
- drained juice from strawberries
Instructions:
For Cake:
Preheat over to 350 degrees
- Measure all ingredients.
- Cream margarine a medium speed with electric mixer until light and fluffy.
- Gradually add sugar and vanilla extract. Cream thoroughly.
- Add eggs one at a time.
- Gradually add flour until mixed well.
- Add drained berries and mix well.
- Pour batter into a 10- inch tube or sheet pan.
- Bake at 350 degrees for about 1 hour and 15 minutes, or until a wooden toothpick inserted in the center of the cake comes out clean.
- Remove from pan and let cool.
- Frost cake.
For Icing:
- Cream butter.
- Gradually add sugar and strawberry juice. Mix well.
Suggestions:
May use your favorite berries – raspberries, blueberries, etc.
May use for cupcake batter.
