Linguine with Clam Sauce

Ingredients:

  • 2- 6 ½ ounce cans of minced clams, undrained
  • Vegetable cooking spray
  • ½ cup chopped onion           
  • 2 tablespoons minced fresh parsley
  • ½ teaspoon garlic powder
  • 1/8 teaspoon pepper
  • 4 cups hot cooked linguine (cooked without salt or fat)
  • 2 tablespoons grated Parmesan cheese

Instructions:

  1. Drain clams, reserving liquid; set aside.
  2. Coat a large on-stick skillet with cooking spray.  Place over medium high heat until hot.
  3. Add onion; sauté until tender.
  4. Add reserved clam liquid; reduce heat, and simmer, uncovered 15 minutes
  5. Stir in clams, parsley, garlic powder, and pepper; cook until thoroughly heated.
  6. Combine clam mixture and linguine in a large bowl; toss well.
  7. Sprinkle with Parmesan cheese and serve immediately.

Yield:  4 servings
