Fluffy Garlic Mashed Potatoes

Ingredients:

  • 1 large head of garlic, split in half horizontally
  • 1 tsp olive oil
  • 3 large baking potatoes, peeled, cubed and soaked in water for 2 hours
  • 3 Tbsp. margarine
  • ¾ -1 cup non dairy liquid creamer
  • ¼ tsp ground white pepper

Makes 8 servings.

Instructions:

Preheat oven to 350 degrees. Drizzle garlic with oil. Wrap securely in foil; roast 30 to 40 minutes, or until soft. Cook, then squeeze garlic out of skins; refrigerate. Discard skins. (If desired, garlic can be roasted the day before.) Drain soaked potatoes and place in large pot. Cover with water and bring to boil. Cover. Cook 20-30 minutes, or until fork-tender. Drain. Mash potatoes well. Add garlic, margarine, pepper and non dairy creamer.Whip potatoes until fluffy and light but still hold shape.
