Confetti Rice
Ingredients:
- 1 cup uncooked regular rice
- 2 ½cups water
- ½ cup chopped onion
- ¼ cup chopped green pepper
- ¼ cup shredded carrot
- 2 Tablespoon snipped parsley
- ½ bay leaf
- 1 Tablespoon unsalted margarine/butter
Makes 4 servings.
Instructions:
Heat all ingredients in large
saucepan, stirring once or twice, to boiling.
Reduce heat to simmer. Cover pan tightly and cook until rice is tender,
5 to 10 minutes (do
not lift cover or stir).
