Confetti Rice

Ingredients:

  • 1 cup uncooked regular rice
  • 2 ½cups water
  • ½ cup chopped onion
  • ¼ cup chopped green pepper
  • ¼ cup shredded carrot
  • 2 Tablespoon snipped parsley
  • ½ bay leaf
  • 1 Tablespoon unsalted margarine/butter

Makes 4 servings.

Instructions:

Heat all ingredients in large saucepan, stirring once or twice, to boiling.
Reduce heat to simmer. Cover pan tightly and cook until rice is tender,
5 to 10 minutes (do not lift cover or stir).
