Classic Mashed Potatoes

Ingredients:

  • 4 pounds potatoes, such as russet, round white, or yellow, peeled, cubed & soaked in large pot of water for 2 hours.
  • 1/3 cup margarine or butter.
  • ¼ cup sour cream or plain yogurt
  • ¼ teaspoon ground white pepper
  • non-dairy liquid creamer (1 c. used)

Makes 10-12 servings.

Instructions:

Drain potatoes hat have been soaking for 2 hours. Place in large saucepan with enough water to cover. Bring to boil. Reduce heat, cover, and simmer for 20-25 minutes or until potatoes are tender when pierced with a fork. Drain. Mash with a potato masher, or beat with an electric mixer at low speed. Add margarine or butter, sour cream or yogurt, & white pepper. Gradually beat in enough non-dairy creamer (about ½cup) until potatoes are light & fluffy. Serve immediately.
