Blueberry Baked Bread

Ingredients:

  • 1 quart fresh or frozen blueberries
  • ¼ cup water (omit if berries are frozen)
  • 1 teaspoon lemon juice
  • ½ cup sugar
  • 1 pinch nutmeg and cinnamon
  • 1 tablespoon margarine
  • 3 slices bread (buttered and sprinkled with cinnamon and sugar on both sides)

Instructions:

  1. Wash blueberries under cool running water.
  2. Add all ingredients in sauce pan except bread.   boil.
  3. Pour mixture into a shallow baking pan, top with bread cut in halves and bake at 425 degrees until brown, about 10 minutes

Suggestions

  • May be used as dessert, snack or fruit.
  • Other fruits may also be used:  strawberries, cherries, apples, blackberries, and canned peaches.
  • Other seasoning may be used to enhance the flavor of the fruit:  allspice, cinnamon, nutmeg and brown sugar.

Yield:  6 servings
Serving size:  ½ cup
One serving = 1 Bread/Starch, 2 Fat exchanges
