Baked Chicken and Celery

Ingredients:

  • 4 boneless chicken breasts
  • 2 cans celery soup*
  • ½ cup non-dairy creamer
  • 1 tablespoon dehydrated onions
  • 1 cup white rice Nonstick cooking spray

Instructions:

Remove skin from the chicken breasts and rinse.  Brown chicken in pan using cooking spray.  Mix soup with non-dairy creamer in double boiler and heat until mixed well with no lumps.  Use low heat DO NOT boil.  Spray baking dish with cooking spray and place chicken in dish.  Cover with soup mixture.  Add onions.  Bake at 350 degrees for 1 hour.  About 20 minutes before chicken is done, cook rice following package direction.  Place chicken over rice and serve.
